This AirFryer recipe presents to you a real Breakfast for Champions. And the best part – it is gluten free! I have experimented before with going gluten free and always struggle since I love bread too much. These Airfried Banana Muffins (with coconut) really do change my perspective though. They are fluffy, not too sweet and satisfy well enough my “gluten” craving.

The Spam Ham, on the other hand, just adds the final touch to the dish. Its savory flavor is a perfect fit for the muffins. I usually pour Maple syrup on top to bring out the flavors even more.

Muffins

Mix in a bowl the banana, 2 eggs, the coconut flakes and the honey. Mix until smooth. Pour into the silicon muffin holders.

Airfry the Muffins at 350 F / 160 C or until golden brown for 15 minutes. Let them rest for a few minutes once out of the Airfryer.

Airfry the SPAM Ham slices at 400 F / 200 C or until golden brown for 10 minutes. Let them rest for a few minutes on a paper towel once out of the Airfryer, to remove the extra oil.
