2 tbsp Teriyaki sauce
for seasoning Fresh Cilantro

Air fried Teriyaki Eggplant is one of my new favorite recipes to do in the Airfryer.

It is nutritious, filling, easy to prepare and vegetarian. Moreover, the Eggplant comes out moist and caramelized on top. This Airfried Teriyaki Eggplant is a guaranteed crowd pleaser. The flavors are strong, yet subtle. Additionally, the cilantro on top does add the fresh flavoring.

You can serve this as a main dish, pairing it with some steamed rice. Alternatively, you can air fry some Teriyaki Chicken Wings and have yourself a Teriyaki night!

Preparation time

Cut the eggplant horizontally and vertically. Brush with olive oil and season with the garlic powder and paprika.

Airfryer time

Airfry for 15 minutes, covered with aluminum foil, at 375 F / 180 C.
Uncover, brush with the Teriyaki sauce and place back in the Airfryer for 10 minutes.
Season with fresh cilantro on top.
