Air Fried Miso Eggplant is one of my favorite vegetarian dishes to order in a restaurant.
So today I have decided to recreate it at home, in the Air Fryer naturally. This flavorful eggplant dish originates from Japan, hence the name Dengaku Nasu. What I love about it is that the miso paste really softens the eggplant meat and give it a juicy and creamy texture. Additionally, as miso paste is gluten free and vegan friendly, the Miso Eggplant is suitable for almost everyone.
Sprinkling the eggplant with some fresh cilantro is indeed optional. For me, cilantro is one of the herbs that goes well with almost everything and gives it a fresh taste.
Pair this Air fried Eggplant with some steamed rice and you have a full vegetarian and gluten free main meal.

Preparation timeCut the eggplant in half and criss cross dice it. Season with 1 tsp sesame oil, the paprika and garlic powder. In a bowl, mix the honey, miso paste, 1 tsp sesame oil and the seeds. Mix well. |

Air Fryer timeAir fry first the eggplant for 15 minutes at 375F/180C. Then take out, brush with the miso paste mixture and air fry for 10 minutes more. Sprinkle with the fresh cilantro. |
