Step 1Cut the eggplant horizontally and score it. Season with the olive oil, 1 tsp garlic powder and cayenne pepper. Place in the Air Fryer for 15 minutes, skin down, at 380F / 180C. |

Step 2In the meantime, combine the mustard, honey and left cayenne and garlic powder. Mix well. Take out the eggplant and brush with the mix. Put back in the air fryer for extra 8 minutes. |
