The holiday season is finally starting and it is time for us to think and prepare our menu! I believe that this Air fried Pumpkin MacNCheese is the perfect side for this year’s Thanksgiving celebrations. The pumpkin‘s creaminess mixed with the gooey cheeses is a definite crowd pleaser. On top of it, the pumpkin pie spice gives the dish an extra kick and warmth.
What I also think is important to mention about this version of Mac’N’Cheese is that since it is vegetarian, it is appropriate side dish enjoyed by all. You can alternatively add some bacon bits that would go very well with it, adding some crunch and saltiness.

Preparation timeMix in a bowl the milk, pumpkin puree and spice. Add a pinch of salt and pepper. In an air fryer safe bowl, place the macaroni, pour the pumpkin milk mixture in and the grated cheeses. Mix well. |

Air fryer timeAir fry for 30 minutes at 320F / 160C, stir 2-3 times half way through to ensure that the cheeses and pasta cook properly. |
